Chipotle Avocado Bean Wraps
It’s past time for another recipe! I’m particularly proud of this one since I actually made it up myself last fall. My daughter won’t go anywhere near this meal, so I spiced it up a little for a nice change.
1-2 TB diced onions
Hot pepper flakes to taste
1 can chili hot beans
½ cup+ El Pinto chipotle medium salsa
Ground chipotle pepper (or jarred) to taste
|Avocado, tomato, onion & red pepper flakes|
Chop the avocados and tomatoes into large pieces, add the onions, sprinkle on some pepper flakes and cook in a large skillet on medium-high until everything is hot. Cook a few minutes more, stirring occasionally, and then add the chili hot beans (or a different bean + chili powder, cumin and garlic), salsa and a sprinkle of chipotle pepper. Once everything is thoroughly hot, it’s ready. Throw some in a wrap and enjoy.
Notes: When making this meal, the point is not to cook the avocado and tomato to death, just to sauté them. (See pics)
You could certainly use a different salsa, but I don’t recommend it. El Pinto is available at Kroger stores. If you use another salsa, add plenty of chipotle pepper (unless you don’t want it spicy, of course).
